Cucumber, Turkey and Avocado Paleo Roll
Cavemen Gourmet is a website where you cand find a lot of paleo snack recipes. I’ve just discovered it and I love it. Specially the Cucumber, Turkey and Avocado Paleo Roll. It’s must be delicious, in addition it has an original presentation. Let’s see, we must:
- Peel the cucumbers.
- Then cut your cucumber in half (not lengthwise!).
- Next make an initial indentation lengthwise and start cutting the core of the cucumber out, creating a hollow log shape out of the cucumber.
- Next, core and slice your avocado in quarters.
- Layer the turkey in the cucumber and place the avocado in the turkey.

INGREDIENTS:
2 cucumbers
8oz sliced turkey breast
2 ripe avocado
Bacon wrapped baked plantains
Via The Christian Science Monitor I found this amazing appetizer for you paleo summer barbecue. Fast and easy to cook, in only 20 minutes you will amaze your guests with a sweet paleo snack.
Bacon wrapped baked plantains
- Yield: 21 pieces
- 3 ripe plantains (the plantains should be very ripe but still be able to hold its shape; get those with blackened spots)
- 1 (200 g) 7-ounce packet of bacon
- Toothpicks
- Preheat oven to 375 degrees F.
- Line a baking sheet with foil and set aside.
- Peel the plantains and cut them into 1-inch rounds and cut the rashers of bacon in half.
- Wrap each piece plantain with a piece of bacon and secure with a toothpick.
- Align the bacon-wrapped plantain on the baking sheet.
- Bake until the bottom of the plantains are caramelized and the bacon cooked through
- Remove and place on wire rack to cool.
Serve baked plantains with bacon caramelized-bottoms up for a dramatic presentation. Serve warm or at room temperature.
